Here's a list of my favorite healthy and easy to make breakfasts for the school week!
Pumpkin Pie Overnight Oats

A fall favorite that will not only leave you full throughout your morning to prevent you from mindlessly snacking, but get you in your autumn feels. Tastes like dessert for breakfast!
Recipe:
1/4 cup of vanilla or plain greek yogurt 1/4 cup of pumpkin puree 1/2 cup of almond milk (or any nondairy) 1/2 cup of rolled old fashioned oats 1Tbs ground flax seeds 2 Tsp of chia seeds 1Tsp agave (add more if you want it sweeter) 1/4 Tsp cinnamon 1/2 Tsp pumpkin pie spice
Combine all ingredients into a bowl and mix until well combined. Transfer to a mason jar or tupperware container and let it sit in the fridge overnight. Grab in the morning and top with candied walnuts, blueberries, or dark chocolate chips!
Frozen Greek Yogurt Bar

These sweet and tart bars are perfect for grabbing when you're in a rush. Not to mention, they keep well in the freezer for up to 3 weeks so breakfast can be the last of your concerns while you're putting in the work all week!
Recipe:
2 cups of rolled old fashioned oats 1 cup of almond butter (or any preferred nut butter) 1tbs of honey 1/4 cup of ground flax seed 1tsp of cinnamon 1.5 cups of greek vanilla yogurt 1 cup of berries (to stew)
Combine oats, almond butter, honey, flax seeds, and cinnamon in a bowl. Mold mixture into a small baking sheet/pan. Cook berries in a pot over the stove until properly stewed. Pour the greek yogurt onto the oat mixture and then pour the stewed berries overtop, dragging them through the yogurt. Place in freezer for at least 1 hour.
*Note*
Allow the bars to thaw for at least 2 minutes before cutting them out of the freezer
Avocado Toast with an Over-Easy Egg

Though this breakfast takes preparation time before eating, let me tell you it is worth it. On days that I tend to have more time in my mornings I find myself constantly opting for this protein and nutrition filled breakfast option that only takes around 10 minutes to prepare.
Recipe
1 piece of toast 1 egg 1 avocado 1/2 cup of kale 1/2 Tsp of red chili flakes
The instructions are pretty simple, all you have to do is toast your bread and make an over-easy egg. Mash your avocado on your toast and cook your kale on a pan for a minute or two and place atop the smashed avocado. Put your egg on top of the avocado and kale and sprinkle the red chili flakes over your egg, and voila! A delicious breakfast, warm and ready to enjoy in minutes!
Blueberry Oat and Greek Yogurt Muffins

This recipe is perfect for meal prepping and you can store these muffins in the freezer up to two weeks from first baking them. Full of fiber and antioxidants, these muffins are a great alternative for any carb lover!
Recipe: (makes 12 muffins)
1 cup of rolled oats 1 cup of whole wheat flour 1 cup of greek yogurt 1/3 cup of honey 1 large egg 2tbs of coconut oil 1tsp of baking powder 1/2 tsp of baking soda 1/4 tsp of salt 1 cup of blueberries
Mix the wet ingredients with the oats and let sit for 5-10 minutes. Preheat the oven to 400 degrees Fahrenheit. Add dry ingredients to oats and wet mixture and fold the berries into the bowl. Divide the batter into muffin pans and bake for 18-20 minutes.
Peanut Butter, Honey, and Banana Toast

This final recipe is super simple but filling and absolutely delicious, it's a classic!
Recipe:
1 piece of toast 1-2tbs of peanut butter (or preferred nut butter) 1 sliced banana 3/4 Tbs raw honey
Toast your bread and then spread your nut butter on the bread. Place the sliced banana on top and drizzle with honey. I like to jazz my peanut butter toast up by additionally adding nutritious toppings such as chia seeds and coconut flakes, even blueberries! Anything for extra texture and taste!
Making breakfast in the morning or the night before is such a great habit to get into and already has you feeling like you've accomplished something at the very start of your day! Hope you found these recipes inspiring and remember breakfast is so important to kick start your day and from personal experience I even find myself feeling more prepared for my day after enjoying a tasty breakfast!
